Easy to make!
- 1 cup Jasmine rice
- 1 cup coconut milk
- one bunch of scallion, chopped
- 2 teaspoons of curry
- 2 cups water
- one bay leaf
- Saute the scallion
- mix in the curry and the rice
- add the coconut milk, water and bay leaf
- simmer on low for 15 minutes.
I make this rice when I make the chicken satay. I divide one can of coconut milk for these two dishes.
