Easy crispy potato bites made from leftover mashed potatoes, or newly boiled potatoes! These potatoes have a soft center and a crispy outer edge!
Ingredients
- Mashed Potatoes, or Potatoes boiled and peeled.
- Olive Oil
- Sea Salt
- Red Pepper Flakes
- Oil Spray
- Pepper
Directions
- Set oven to 410 degrees Fahrenheit.
- In a large bowl, combine mashed potatoes and add sea salt and red pepper flakes to taste.
- Add enough oil to the mixture to hold the potatoes together when they are flattened (should be less than 1 tablespoon).
- Scoop out enough potato mixture so that when flattened it will be no larger than 2 inches in diameter and 0.125 inches in height.
- You’ll want these at flat as they can be if you want them to be crispy!
- Place parchment on a large pan and add the potato rounds.
- Lightly spray the top surface of each potato round with oil so that it gets crispy! Sprinkle pepper to taste.
- Bake for 45-60 minutes (longer = more crispy!)
- What you’re left with is a potato-like-chip with a soft center and crispy outside!
Notes
These do not do well in the fridge over night! So eat them up right away! Great with eggs & ketchup for breakfast!
