Chicken schnitzel

Ingredients

  • 10-12 chicken tenders
  • 1 cup flour
  • 2 eggs
  • 1 cup bread crumbs
  • salt
  • canola oil for frying
  • parchment paper

Directions

  1. pour the flour on a large piece of parchment paper
  2. beat the eggs in a medium size bowl
  3. pour the bread crumbs on a large parchment paper
  4. using a hammer meat tenderizer flatten the chicken tenders to 1/4 inch thickness
  5. salt each chicken tender individually
  6. take one flattened chicken tender at a time, roll it in flour, dip it in the beaten egg, roll it in the bread crumbs, set on a plate
  7. heat oil in a frying pan, fry the breaded tenders few minutes on each side
  8. when done frying rest them on paper towel to remove some of the oil

Notes

Serve with mashed potatoes!
